Chef Claire McCormick has been running popular vegetarian cookery classes at Luisne for a few years. Claire has worked in many of Ireland’s leading vegetarian restaurants including The Happy Pear, Escape Bray, It’s Natural and Cornucoppia,
Learn how to prepare tasty and healthy vegetarian meals for beginners and more experienced cooks alike. We will focus on expanding your repertoire of tasty, imaginative and original meals, suitable for individuals or families. Many of these recipes were developed by Claire whilst working in a variety of Ireland’s leading restaurants. Where possible, Claire uses local, organic and whole food produce and offers gluten and dairy free alternatives for most of the recipes.
Starters and desserts will also be included in the repertoire, so by the end of the course, you will have a healthy repertoire from home cooking to a special dinner party menu!
Speaking with Claire recently she said “I have been working in hotel and catering for 33 years now as a chef , my love of food brought me to explore Vegetarian , vegan and raw foods . I also spent some time as a pastry chef and have created many special diet recipes. Some of my work has been published in The Choice , the program by Bernadette Bohan. Cornucopia at Home Cook Book and The Cashel Blue Cheese Vegetarian Cooking Leaflet.”
